Every day fresh fish arrive at La Choza's Kitchen Door, delivered by local fisherman. La Choza regularly buys only the best Red Snapper (Huachinango), Wahoo, Mahi-Mahi (Dorado), Shrimp (Camarón), Lobster (Langosta) and Conch (Caracol).

Our foods are cooked in the traditional way; slow cooking to allow the flavors to blend; producing a dish like nothing else available. Chicken in Black Sauce (Relleno Negro), for instance, calls for Chicken slow-cooked in a sauce of many fresh and dried spices and herbs.
